Every week usually I'll make us a wholesome soup, varying it a little, depending on what foods we have on hand. One of my favourites is a sweet potato soup I created earlier this summer, using sweet potatoes (along with a few other vegetables)and broth as a base. After the vegetables are cooked, I use an immersion blender to make a base which also makes the soup nice and thick. Then just add your favourite veggies, cook them up until soft, and dollop with a few spoons of ghee, to make it even creamier! A perfect (and easy) soup to soothe your gut. And so so good!
Gut-Soothing Sweet Potato Soup
(Serves 4)
For the base
2 quarts organic chicken bone broth or organic veg broth
1 organic zucchini
4 stalks organic celery
2 organic sweet potatoes
1/2 organic red onion
1-2 cloves organic garlic
Bring to boil, simmer till veggies are soft. Blend with an immersion blender to create a nice thick creamy base.
Add in:
2 organic sweet potatoes (cut up)
1 pint of sliced fresh organic button mushrooms
1/2 organic red onion (cubed))
2 stalks organic celery
Garnish with ghee
Bring to boil again, simmer till veggies are almost soft, then add in 2 small organic zucchinis - cook for another 5 minutes or so, till zucchinis are al dente. Season with fresh black pepper and sea salt to taste.
