Dan Dan Mian Noodles with Nourish

Earlier this summer we took a cooking class at Vancouver's  Nourish, where we learned how to make Steamed Bao Buns and these Dan Dan Mian Noodles.  The post was published originally here, but the title only mentioned the Bao Buns, so we decided to make another post specifically for the Dan Dan Mian Noodles, since they were so good, and needed to be added as it's own separate recipe on the blog.  To see the original post, click here.  To get the Dan Dan Mian Noodles, check out the how-to below.




Dan Dan Mian




Dan Dan Mian Noodles

INGREDIENTS
1 bunch (70g) Dry Ramen Noodles (Hakubaku brand
used in class)
½ cup (60g) Spinach, Chard or Kale
1/3 cup (40g) Crunchy textured vegetable (Kohlrabi,
Carrots or Daikon Radish)
1 tbsp Cilantro, roughly chopped



For Garnish
1 tbsp Roasted Almonds, ground
1 tsp White Sesame Seeds
1 tsp Black Sesame Seeds
2 tbsp Green Onions, chopped
1 pinch Radish Sprouts
8-10 thin slices, Radish
For Sauce
1/2 tsp Sesame Oil
1 tsp Tahini
1 tbsp Almond Butter
1 tbsp Maple Syrup
1 tbsp Tamari or Soy Sauce
1 tsp Sriracha (add more for extra spicy)
½ tsp Ginger, grated
Optional Protein
½ cup (60g) Smoked Tofu, cut into matchsticks or
cubes or
½ cup (60g) Roasted Boneless Chicken Breast or
Thigh, pulled or sliced thinly
