White + Pink Chocolate-Covered Strawberries


One of the easier treats to make (I think), are chocolate-covered strawberries.  For our wedding (over ten years ago), we made them as an addition to the dessert table.   Back then we made a dark chocolate version, but have always wanted to try it using white chocolate. We saw a pretty version on instagram from Fluffgram also colouring the white chocolate pink, and so for an after dinner treat this weekend with friends, we had to try it.  The white chocolate along with some pretty white and gold sprinkles, takes this dessert to a new level of pretty!  I also melted the chocolate in the microwave (a tip Hulaseventy suggested to us) which is way easier than doing so over a double boiler. Here's how we made it!






You will need:
2 cups of strawberries
1 - 6 oz. package of white chocolate
sprinkles
icing bag
chocolate paper liners
parchment paper

To make:
Wash and dry the strawberries completely.  The chocolate won't stick to the strawberries if they are wet.  In a microwaveable bowl, break up 6 oz. pieces of the white chocolate and microwave on high for 30 seconds.  Stir.  Return to microwave and microwave for 30 more seconds.  Stir again.  If still not melted,  microwave again for another 30 seconds.

Place some parchment on a cookie sheet to collect the dipped strawberries.

Remove chocolate from the microwave and stir.  Once smooth, start to dip strawberries, one at a time by holding the strawberry by it's stem until the strawberry is completely covered.   Place on the parchment. Decorate with sprinkles immediately so they stick.  If not decorating with sprinkles, but with a drizzle of another colour of icing, let sit to harden.

Once you have dipped about half (how many you prefer in the plain white chocolate), then start to colour the chocolate with one drop of pink (or red) food colouring.  Stir until mixed.  Dip the other half of strawberries in the pink.  Set aside, or decorate with sprinkles.  You could also make a few even a darker pink, by adding another drop of pink to another set like we did.

To add a drizzle decoration, pour the preferred colour of melted chocolate into a piping icing bag, and cut a small hole in the bottom.  Quickly drizzle the icing over the pre-dipped strawberries.

Place each strawberry in a chocolate paper liner and serve! Yum!
