Ice Cream Bar | Fairy Bread Ice Cream


Nothing like kicking the week off with a treat to set things right, right? This week's flavour is a bit of a game changer.  How can something so simple taste so amazing?  How can bread taste like cake when mixed with a few sprinkles and vanilla ice cream? Fairy magic, maybe? Adding fairy bread (a commonly served treat at children's parties in Australia and New Zealand consisting of bread, butter and sprinkles) to vanilla ice cream isn't something new in the southern hemisphere (where we drew our inspiration from), but I haven't seen this flavor in any of the ice cream shops we know around here; so of course we had to try this recipe ourselves, and then once so, had to include it here in our Ice Cream Bar posts.  So good and so easy! A crunchy cake-flavoured ice cream scoop of goodness (and so fun to make)! Recipe below.





Fairy Bread Ice Cream
(Makes 2 servings)
5-6 scoops of vanilla ice cream
4 slices of white bread
butter or margarine (softened)
sprinkles (round 100s and 1000s are best)
chocolate ganache or sauce
waffle cone

To Make:

This one is pretty simple.  But we toasted the bread in this classic recipe (to keep the bread from breaking down too too much). Take some white bread, toast it, butter and then sprinkle with round multi-coloured round sprinkles. Cut into small pieces.


Place a marble pastry board or tray into the freezer to cool.  If you don't have one you can use a porcelain platter or plate.  For the fairy bread, we toasted it so that it doesn't get too soggy when mixed with the ice cream. So toast the bread and butter.  Sprinkle with the sprinkles.  Cut into small squares.

Pull out the marble pastry board and scoop ice cream onto it.  Add the cut up fairy bread (toast) and mix quickly using a pastry scraper or spatula.  Scoop up and place into a bowl to re-cool in the freezer.


In the meantime, dip the cones into the chocolate (ganache or sauce), and then into the sprinkles.  Pull out the ice cream and scoop up the fairy bread ice cream and place in the cones!
