I spent the morning snuggled up on the couch with a cup of tea, embroidery,, and 4 hours of girly tv lined up. Turkey dinner at the in-laws tonight. Happy Thanksgiving!
Lard is actually excellent for pie crust! It makes for a very flaky pastry. I've also used rendered duck fat, which doesn't have as much meat flavor as lard (and lard doesn't have a lot of meat flavor, just a trace).

I use Pamela's "Baking and pancake mix" gluten-free flour blend and swap it out exactly for wheat flour in my standard pie-crust recipe (1 stick butter:1 1/4 cup flour:1/2 teaspoon salt:a bit of sugar). It usually turns out better than when I use normal flour and I would probably use it all the time if it wasn't so danged pricey.
