I wanted to make my favourite chocolate chip cookies
for a friend's birthday but was all out of chocolate chips. I know.
Zero chocolate chips + me = serious sad face. But I didn't get bummed
for too long, because I found a cookie recipe that called for coconut
and lime. How summery and delicious does that sound? Plus, I had
recently watched a documentary about the life of Harry Nilsson and had
that dang "She put the lime in the coconut and shake em both up" lyric in my head. That was the push I needed. Coconut lime cookies it is!
These
cookies were pretty simple to put together though I think next time I
make these, I'll be adding in more lime juice or a few drops of lime oil
extract. I like a cookie with more of a citrus kick.
To
make the toasted coconut, take regular unsweetened coconut and place it
in a small skillet. I use a heavy one made from cast iron which doesn't
allow the coconut to burn so quickly. Turn on the heat to medium-high
and stir it around a bit until it becomes mostly golden brown and
toasty. It will start smelling really, really good. Remove it from the
pan so it doesn't burn and let it cool. Then, start the cookie recipe.
Once
baked up, these result in a very soft and chewy cookie. Pack them up in
a large glass mason jar for a friend or keep them for yourself. I think
they'd make nice ice cream sandwiches too with a little vanilla ice
cream or raspberry sorbet!
Coconut Lime Chewy Cookies
(recipe adapted from My Baking Addiction)
2 3/4 cups all-purpose flour
1/2 cup unsweetened toasted coconut
1 teaspoon baking soda
1/2 teaspoon baking powder
1/2 teaspoon salt
1 cup salted butter, softened*
1 1/2 cups white sugar
1 egg
1/2 teaspoon vanilla extract
zest from 1 lime
3 tablespoons of fresh lime juice
1/4 cup sugar for rolling cookies
Preheat oven to 350F. Line cookie sheets with parchment or silpat.
Mix together flour, toasted coconut, baking soda, baking powder, and salt together in a medium mixing bowl. Set aside.
In
a large bowl, combine the butter and sugar together until fluffy. Add
in the egg and mix well, along with the vanilla, lime juice and zest.
Slowly mix in the dry ingredients until combined.
Roll
dough into teaspoon-sized balls and then roll in sugar. Flatten
slightly and place on lined cookie sheets two inches apart. Bake for 10
minutes or until bottoms are lightly browned. Cool for a few minutes
before moving to a wire rack to cool completely.
* I used salted butter here and really liked the hit of extra salt that came through in the finished cookie. You can use unsalted & they'd be great too.
