It's spring! Though I find it hard to believe out here where we've been greeted with rain, hail, snow and sunshine....sometimes all in the same day. How I long for outdoor patios and flip flops and beach picnics! But that's coming soon, right? And if you're in the other half of the country, the weather must be brilliant. Trust us, we're jealous.
I decided to whip up some colourful sunshine in a bowl. I'm calling this a sunshine citrus slaw because it's chock full of colour, citrus juice and it can't help but make me grin. Yes, I grin at coleslaw. Nothing wrong with that.
The truth is, I've been pretty much making this salad every couple of days. My husband and I eat it up happily and we're not sick of it yet. I've made this with just lemon juice. No garlic. All, equally delicious.
His version includes raisins and pepitas as a topping. Mine, feta. And pepitas. And raisins. I like it all.
Sunshine Citrus Slaw
1/2 head of green cabbage, finely sliced
1/4 head of purple cabbage, finely sliced
2 green onions, finely sliced
1 large carrot, grated or julienned
2 tablespoons freshly squeezed lemon juice (about 1/2 lemon)
2 tablespoons freshly squeezed lime juice (about 1/2 lime)
1/4 cup neutral oil (like canola)
1/2 tablespoon honey or agave
1 clove garlic, minced
1/4 teaspoon aleppo pepper
pinch of kosher salt
4 tablespoons toasted pepitas
4 tablespoons feta cheese, crumbled
2 tablespoons raisins (if desired)
In a large bowl, toss together the cabbage, green onions and carrots until well mixed.
In a small jar, pour in the lemon and lime juice, oil, honey, garlic, aleppo pepper and salt. Give everything a big shake and pour over slaw. Toss well. Serve in 4 bowls and top with pepitas and feta. Sprinkle with raisins if that's your thing.

yummy...i too am a huga fan of coleslaw. along with enjoying it a variety i salady ways, i also add it to soups stews & cassarole's! i'm def gonna add this one to my options... :)

mmmm! i made something similar for bbqs and the like last summer…its lovely if you pop some grated apple through aswell, and some grated cheese if you are eating it same day, mmmm and some tasted cashews, or sesame seeds..mmm maybe i will make some tommorrow!!!! :)
